Bunny Bungalow

One of my favorite aspects of cookie construction is coming up with new ways to use my structures. When I set out to design the April 2025 cookie cutter construction set, I knew I wanted to make something Easter-themed, featuring bunnies, carrots, and Easter eggs. The finished product was a Bunny Bungalow cookie house, paired with a Bunny Bungalow Carrot cookie texture roller, and it evoked just the Spring and Easter vibes I was looking for. The recipe I developed is one of my best yet: Carrot Cake Crunch cookie with cream cheese royal icing. Perfect as an Easter or Spring dessert, this cookie would make a beautiful addition to any tablescape.

As I was constructing my Bunny Bungalow, I decided to fill it with Easter candy. Peeps, jelly beans, and chocolate eggs would make perfect additions, and bring in a hint of whimsy. But why not take it a step further?? A Bunny Bungalow cookie house, filled with Easter candy (and toys) would make a unique and memorable (and delicious) replacement for a traditional Easter basket!
Anyone who grew up celebrating Easter can remember the excitement and joy of coming downstairs on Easter morning and finding a beautiful basket, filled with goodies, just for you. It always made me feel special (my mom always found something thoughtful to include), and I could spend the entire day admiring and feasting on it. Had I come down to the living room one Easter Sunday and found a Bunny Bungalow cookie house, I can't even imagine how I would have reacted. I'm hoping to make one for my niece & nephews this year - and looking forward to their reactions!
